Fried Bread Dough (or Pizza Dough)
Description
This recipe uses a prepared pizza dough that is portioned and shaped by hand into rounds, avoiding the use of a rolling pin to preserve airiness. The rounds are fried in sufficiently hot olive oil on a stovetop pan until golden brown on one side, then flipped to cook the other side. During frying, the dough expands and bubbles appear, indicating proper heat and rising.
The fried bread achieves a crisp exterior while maintaining a soft, chewy inside. Its neutral flavor allows for sweet or savory use. Sprinkling with cinnamon sugar can create a treat reminiscent of carnival elephant ears, or it can serve as a base for toppings or dips.
The frying pan need not be non-stick as olive oil provides a crisp surface for frying. Leftover dough rounds can be reheated or repurposed for various meals or snacks. This process requires advance planning since the pizza dough recipe itself requires 12 to 18 hours for fermentation and resting.
Ingredients

- extra virgin olive oil (as needed to fry dough)
Instructions
- Make one recipe's worth of pizza dough using this recipe: Pizza dough recipe
- Cut off a piece of dough, and shape it into a round on a well floured surface (do not use a rolling pin). I usually make them about the size of the frying pan I'm using.
- Heat some olive oil in a frying pan, over medium high heat (it doesn't need to be non-stick.) Make sure the pan is very hot, then place the dough in the pan.
- It will begin to rise, and bubbles will appear. Once it is golden brown underneath, turn it over.
- When golden brown on the second side, remove to a paper towel lined plate. Repeat with remaining dough.
Notes
- The pizza dough requires 12 to 18 hours rest prior to frying; plan accordingly.
- Enjoy the fried dough plain or topped with your preferred ingredients.
- For a sweet snack, sprinkle fried dough with cinnamon sugar to create a treat similar to elephant ears.
