Italian Antipasto Skewers

Italian Antipasto Skewers combine cooked tortellini, thick-cut spicy pepperoni, pepperoncini, and artichoke hearts on individual skewers. Garnished with a drizzle of balsamic glaze, these skewers offer a balance of tender pasta, spicy cured meat, tangy pepperoncini, and tender artichoke with buttery and sweet finish from browned butter and glaze.

Description

This appetizer assembles cooked spinach and ricotta tortellini (or sausage flavored) that has optionally been tossed in browned butter for richness. Thick-cut, extra spicy pepperoni slices are browned separately to crisp slightly and mellow pork fat taste. Italian-style pepperoncini are prepared by removing liquid and cutting into pieces. Quartered artichoke hearts complete the flavor variety.

Skewers are built by threading one piece each: tortellini, pepperoni, pepperoncini, and artichoke heart in any order. A drizzle of balsamic glaze finishes the skewers, adding a touch of sweetness and acidity to complement the savory and spicy ingredients.

These skewers serve well as finger food at parties or antipasto platters and offer a diverse combination of textures: tender pasta, crispy pepperoni, juicy pepperoncini, and soft artichokes, tied together with warm butter and glaze notes.

Ingredients

  • 24 tortellini I use Spinach and Ricotta, sausage is also a great flavor
  • 24 lices pepperoni (extra thick cut spicy)
  • 24 Pepperoncini piece them and squeeze out the liquid, Italian
  • 24 artichoke heart quarters
  • 1/4 cup balsamic glaze
  • 2 tablespoons butter

Instructions

  1. Cook the tortellini to the manufacturers specifications.
  2. An optional but delicious step, brown some butter in a pan and toss the cooked tortellini in it.
  3. To brown butter melt over medium heat, it will begin to foam as it melts. When the solids drop to the bottom of the pan and it looks like a very light colored tea, you can turn it off so it doesn't start to burn. It is best to use a light colored pan for this so you can see the color of the butter, but if not judge it by putting a spoon into the butter.
  4. For the pepperoni, to bring out the flavor I let them brown in a pan for a couple of minutes to get them a bit crispy and to lose the flavor of the cold pork fat.
  5. Add your items to your skewer, one per skewer in any order you would like.
  6. Drizzle your balsamic glaze over the top.
