Description

To make Gallo Pinto, drained black beans are combined in a pan with sautéed finely diced yellow onion, red bell pepper, and chopped cilantro cooked in olive oil with salt until softened. Lizano sauce, a signature Costa Rican condiment with a tangy, mildly spiced profile, is added to the vegetables and beans. Then cooked white rice (preferably long grain and day-old for better texture) is stirred in to absorb the flavors.

  • 1 oz black beans drained, not rinsed
  • 2 tbsp olive oil
  • ½ medium yellow onion very finely diced
  • ½ red pepper very finely diced
  • 2 tbsp cilantro finely chopped
  • ½ tsp salt
  • 2 tbsp Lizano sauce can substitute Worcestershire Sauce if necessary
  • 3 cups white rice about 1 ½ cups uncooked rice prepared according to package instructions if preparing the day of, cooked, leftover
  • ¼ cup black bean juice reserved

Instructions

  1. Drain 1 can of beans, but reserve the liquid from the can in a small bowl.
  2. Add 2 tbsp oil to a large pan and heat it over medium high heat.
  3. Add the ½ onion, ½ red pepper, 2 tbsp cilantro, and ½ tsp salt and heat until the vegetables begin to soften, about 5 minutes.
  4. Add 2 tbsp Lizano.
  5. Add the beans into the pan and stir until heated.
  6. Add the 3 cups rice, and stir with the beans.
  7. Pour in the reserved bean liquid from the canned beans. Stir until everything is heated through.
  8. Serve with a fried egg for a delicious breakfast. Enjoy!
