Garlic Couscous Recipe

This garlic couscous is a recipe I reach for when I want a flavorful yet simple to make side dish. It's influenced heavily by my garlic butter rice, which is another of my family's favorite recipes. The double duty garlic - crispy garlic chips and sauteed minced garilc - make this recipe really special.

Instructions

  1. Instructions Cut half of the garlic cloves into thin slices. Mince the other half of the garlic.
  2. Heat the olive oil in a medium pot over medium heat. Add the sliced garlic and let it cook for 3-4 minutes, until it's golden. Using a slotted spoon, remove the crispy garlic chips from the pot. NOTE: if some darken quicker, remove the darker ones first.
  3. Add the minced garlic to the pot and let it cook for 1 minute. Add the stock and salt and bring the pot to a boil. Stir in the couscous, cover the pot, and let it simmer for 5 minutes, reducing the heat if needed.
  4. Remove the pot from the heat and set it aside, covered, for 5 minutes. Fluff the couscous with a fork and then stir in the parsley and lemon juice.

Notes

  • Couscous: This recipe uses small couscous, often called Moroccan couscous. It differs from pearl couscous (also called Maftoul or Palestinian couscous, amongst other names.) If you only have pearl couscous, you need to add more water and boil it longer.
  • Garlic: This recipe is for garlic lovers. Feel free to reduce the amount if you'd like a milder garlic flavor, but my family thinks the amount in this recipe is perfect!
