													Couscous with sweet nectarines and toasted almonds is an easy and delicious side dish salad for any meal.

                                Ingredients
- 1 cup water
 - 1 cup whole wheat couscous
 - ¼ teaspoon salt
 - 2 teaspoons extra-virgin olive oil
 - 1 nectarine chopped
 - ¼ cup slivered almonds toasted
 - 1 green onion thinly sliced
 - Juice of ½ lemon
 
Instructions
- Bring the water to a boil in a small saucepan. Add the couscous and salt, cover and remove from the heat. Let stand for 5 minutes.
 - Fluff the couscous with a fork and stir in the olive oil.
 - Stir in the nectarine, green onion and lemon juice. Serve.
