This recipe starts by cooking pasta in salted water just short of the suggested packet time, preserving a slightly firm texture. While the pasta cooks, garlic is thinly sliced and gently cooked in butter over very low heat until soft and fragrant, avoiding any color change to maintain a mild flavor. Olive oil and chopped fresh parsley are then stirred into the garlic butter mixture and removed from heat.
After draining the pasta and reserving some cooking water, the pasta is returned to the pot. The garlic parsley sauce is poured over, along with a portion of the reserved water. The pasta is tossed over moderate heat to combine and finish cooking, with additional water added as needed to keep the sauce coating the pasta smoothly. For the Pasta
- 12 oz pasta
- 1 tablespoon salt
For the sauce
- 3 tablespoons butter
- 6 cloves garlic thinly sliced
- 3 tablespoons olive oil
- 3 tablespoons parsley chopped, fresh

Instructions
Cook the pasta
- Bring a large pan of water to a boil.
- Once the water is boiling, add the salt and pasta.1 tablespoon salt12 oz / 340 g pasta
- Cook the pasta for 1 minute less than the packet suggests.
- Reserve 2 cups of the pasta cooking water and then drain the pasta. Return it to the pan.
While the pasta is cooking, make the sauce
- Melt the butter over low heat in a small skillet.3 tablespoons butter
- Add the garlic to the butter and cook it over very low heat for 4-5 minutes. Don't let the garlic color.6 cloves garlic

- Pour the garlic parsley sauce over the pasta with ⅔ cup of the cooking water; use tongs to twist and mix the pasta into the sauce.
- Cook over medium heat for 2 minutes until everything is well coated, and the pasta is cooked to your liking. Add more pasta cooking water if needed.
- Season to taste and serve. salt and black pepper
