Garlic Redskin Mashed Potatoes Recipe

No holiday meal is complete without the perfect, creamy, mashed potatoes. This easy recipe is seasoned with garlic, green onions and loads of butter. The result is a melt-in-your-mouth delicious side dish!

Ingredients

  • 2 ½ lb redskin potatoes washed and cut into quarters
  • 8 tbsp salted butter cubed
  • 1 head garlic 8-10 large garlic cloves, peeled and minced
  • 2 talks green onions chopped (both white and green parts)
  • ½ tsp sea salt optional
  • ½ tsp onion powder
  • ¼ cup milk
  • 2 oz cream cheese

Instructions

  1. Place 2.5 lb potatoes in a large pot and fill the pot with water. Bring the water to a boil and boil until the potatoes are fork tender (about 15 minutes).
  2. Drain the potatoes, then add them back into the pot. Use a potato masher to mash the potatoes to your desired consistency.
  3. Once the potatoes are cooked, add 8 tbsp butter to a pan over medium heat and allow it to melt. Then add the full head of minced garlic and saute until the garlic is fragrant.
  4. Once the garlic is fragrant, add 2 stalks chopped green onions and saute for another minute.
  5. Add the melted butter and garlic to the mashed potatoes along with the ½ tsp salt, ½ tsp onion powder, ¼ cup milk and 2 oz cream cheese.
  6. Stir to combine and add more milk according to texture preference. Enjoy!

  • Redskin Potatoes: Redskin potatoes have just the right amount of starch to create fluffy, delicious mashed potatoes. The tender skin cooks up so nicely you don’t have to peel the potatoes.
  • Salted Butter: Some people prefer to use unsalted butter to have more control over exactly how much salt is going into their potatoes. It’s fine to make that substitution.
  • Garlic: This recipe also calls for a large amount of garlic. Trust me. It melts perfectly into the potatoes and won’t overwhelm you.
  • Green Onions: The green onions add balance and extra flavor to this dish. You can use the green and the white part of the onion.
  • Cream Cheese: Cream cheese adds a hint of creaminess to the potatoes and helps create the perfect texture too.
  • Milk: Milk is important to helping you reach the best consistency. Whole milk is preferable.
  • Some people feel like red skin potatoes create a gluey texture when mashed. You can add a few Russet potatoes or Idaho potatoes into the mix to help combat this. Just make sure to peel them first!
  • Don’t forget to wash your potatoes well before boiling them. Boiling the potatoes will clean them, but when you dump out the water the dirt at the bottom of the pot may go right back onto your potatoes.
  • If you want to keep your potatoes piping hot, heat up the butter and milk before adding it into your mixture.
