German Chocolate Cookie Bars

If you love caramel, pecans, coconut and chocolate then these German Chocolate Cookie Bars are right up your alley! Made with a simple cake mix crust, and topped with all the goodies, these easy cookie bars are perfect anytime you're in the mood for a decadent sweet treat!

  • 15.25 ounces German Chocolate Cake Mix (1 box)
  • ¾ cup butter melted
  • 1 cup milk divided
  • 11 ounces soft caramels
  • 1 cup sweetened coconut flakes
  • 1 cup pecans chopped
  • 1 ½ cups semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350 degrees F. Spray a 9-inch x 13-inch cake pan with non-stick spray and line with parchment paper. (The paper makes it easy to lift the bars out later.)
  2. Add the melted butter, 1/2 cup milk, and cake mix to a large mixing bowl. Stir until combined. (The batter will be sticky.) Use a rubber spatula to transfer the batter to the prepared baking pan and spread it into an even layer.
  3. Bake for 15 minutes.
  4. While the crust is baking, place all of the caramels into a microwave-safe bowl and pour in the remaining 1/2 cup of milk. Heat in 1-minute increments, stirring after each heating until smooth and fully melted (about 2.5 minutes).
  5. Take the baking pan out of the oven. Pour the caramel evenly over the chocolate cookie crust. Next, sprinkle the coconut, pecans, and chocolate chips evenly over the caramel.
  6. Bake for another 15 minutes.
  7. Remove the bars from the oven and cool completely in the pan on a wire rack.
  8. Once cooled, use the parchment paper to lift the bars from the pan. Use a sharp knife to cut the block into 16 bars. Store any leftovers in an airtight container for up to 5 days.
