Gingerbread Loaf

  • 1 ¾ cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons ground ginger
  • 2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon ground nutmeg
  • ½ teaspoon ground clove
  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • cup applesauce
  • 1 tablespoon molasses
  • 1 teaspoon vanilla

Frosting

  • 1 ½-2 cups powdered sugar
  • 4 ounces cream cheese, at room temperature
  • 1 teaspoon vanilla
  • 2-3 teaspoons whole milk

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and spray a 9x5-inch loaf pan with non-stick spray.
  2. Whisk together 1 ¾ cups all-purpose flour, 2 teaspoons baking powder, 1 teaspoon salt, 2 teaspoons ground ginger, 2 teaspoons ground cinnamon, 1 teaspoon ground nutmeg, and ½ teaspoon ground clove.
  3. In a separate bowl, whisk 1 cup granulated sugar, ½ cup vegetable oil, 2 large eggs, ⅓ cup applesauce, 1 tablespoon molasses, and 1 teaspoon vanilla.
  4. Using a spatula or spoon, add the flour mixture to the sugar and oil mixture and mix until everything comes together into a batter.
  5. Pour the batter into the prepared loaf pan and bake for 55-65 minutes. A toothpick inserted in the center should come out clean.
  6. Remove the loaf from the oven and let it cool completely before frosting.
  7. For the frosting, using a hand mixer, whisk 4 ounces cream cheese, until it is smooth. Add 1 teaspoon vanilla, 2-3 teaspoons whole milk, and ¼ cup of the 1 ½-2 cups powdered sugar at a time, and mix until incorporated.
  8. Continue adding more powdered sugar until a soft frosting texture is reached. Frost the loaf when it is completely cooled.
