Ingredients
- 1/2 cup pumpkin puree
- 1 1/2 cup dark brown sugar
- 1/2 cup canola oil
- 1/2 cup mayonnaise for lactose free version OR sour cream
- 5 eggs
- 1 cup tapioca flour
- 1 cup almond flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 teaspoons vanilla
- 1/8 teaspoon cinnamon
- 1/8 teaspoon ground ginger

Instructions
- Preheat oven to 350°F.
- Combine wet ingredients in a large mixing bowl.
- In a separate mixing bowl, sift together dry ingredients. Add dry ingredients to bowl with wet ingredients and mix well, using a hand or stand mixer.
- Pour into a greased 9" round cake pan and bake at 350°F for 30 minutes.
