Goat Cheese Asparagus Pizza with Potatoes

Ingredients

  • 16 ounces pizza dough
  • 5 ounces fingerling potatoes
  • ½ teaspoon kosher salt
  • 2 tablespoons extra virgin olive oil divided
  • 1 clove garlic minced
  • 4 whole green onions thinly sliced, divided
  • 1-⅓ cup shredded Mozzarella cheese
  • 4 ounces crumbled fresh goat cheese crumbled
  • 8 ounces asparagus ends trimmed, each spear cut in half lengthwise, then crosswise into 2 to 3-inch pieces
  • ½ cup grated Parmesan cheese
  • ¼ teaspoon black pepper

Instructions

  1. Preheat the oven to 425 degrees F and prepare a full-sized baking sheet pan with a non-stick liner such as parchment paper or silicone liner.
  2. Spread out the dough onto the sheet pan and set it aside.
  3. Place potatoes in small saucepan, and cover with water. Add in the kosher salt and bring to boil and cook until potatoes are tender, about 10 minutes.
  4. Drain. Cool. Cut potatoes into thin slices.
  5. Mix one tablespoon of olive oil and garlic in a small bowl. Brush garlic oil over the dough.
  6. Sprinkle on ¾ of green onions and shredded mozzarella cheese, leaving a ½ inch plain border.
  7. Top with potato slices and goat cheese.
  8. Toss asparagus and 1 tablespoon oil in a medium bowl. Scatter asparagus over pizza.
  9. Sprinkle with Parmesan cheese and black pepper.
  10. Bake pizza until crust is browned and asparagus is tender, about 18 minutes.
  11. Transfer to cutting board. Sprinkle with remaining green onions. Cut into pieces.
