Description

The Grape Tomato Sauce begins by sautéing chopped garlic in olive oil over medium heat until golden. Fresh grape or cherry tomatoes, halved if large, are then added along with salt, fresh ground black pepper, crushed red pepper flakes, and oregano or chopped basil. The mixture simmers on low heat covered until the tomatoes burst and soften.

After initial cooking, fresh oregano is stirred in and the sauce continues to cook uncovered for several minutes, thickening slightly while concentrating flavors. The result is a bright tomato sauce that balances the sweetness of tomatoes with herbal notes and gentle heat from the pepper flakes.

  • 1 tablespoon extra virgin olive oil
  • 6 cloves garlic (chopped)
  • 1 1/2 lbs grape tomatoes (or cherry tomatoes, cut in half)
  • salt to taste
  • black pepper to taste
  • 2 tablespoon oregano or fresh basil, fresh chopped
  • 1/8 teaspoon crushed red pepper flakes

Instructions

  1. In a large non-stick pan, heat oil over medium heat. Add garlic and cook until golden, about 30 to 60 seconds.
  2. Add the tomatoes, salt, crushed red pepper flakes and fresh black pepper and reduce heat to low.
  3. Simmer, covered until the tomatoes burst, about for 8 to 10 minutes.
  4. Add fresh oregano and cook, uncovered another 5 to 6 minutes more.
  5. Serve over pasta, fish, chicken, etc.

Notes

  • This recipe makes about 2 1/2 cups of sauce, ideal for multiple servings over pasta or proteins.
