Description

The marinade blends plain Greek yogurt with lemon juice for acidity, minced garlic for pungency, dried oregano for herbaceousness, and mustard for subtle tang. Olive oil adds richness while salt and pepper season the mix. This combination is whisked thoroughly to form a creamy marinade that penetrates meat fibers to enhance taste and texture. It works well on chicken, pork, or beef and is often used for dishes like Greek chicken souvlaki.

  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 garlic minced, cloves
  • 1 tbsp oregano dried
  • 1 lemon juiced
  • 2 tbsp mustard
  • 1/2 cup yogurt plain, Greek
  • 2 tbsp olive oil

Instructions

  1. Make the marinade by whisking together salt, pepper, minced garlic, dried oregano, lemon juice, mustard, greek yogurt and olive oil. Use to marinate chicken, pork or beef. Our favourite way to use it is making our Greek Chicken Souvlaki!
  2. Make the marinade ahead of time and store in the fridge for up to 2 days.

Notes

  • This marinade can be made ahead and refrigerated up to two days before use.
  • Marinate proteins for up to 24 hours to allow the flavors to develop fully.
  • For roasting chicken thighs, cook initially at 400°F for 15 minutes, then reduce to 375°F and continue cooking for 45 minutes or until done.
  • Using this marinade with vegetables, potatoes, or beans in a casserole dish can create a complete meal.
