Greek Chicken Marinade
Description
The marinade blends plain Greek yogurt with lemon juice for acidity, minced garlic for pungency, dried oregano for herbaceousness, and mustard for subtle tang. Olive oil adds richness while salt and pepper season the mix. This combination is whisked thoroughly to form a creamy marinade that penetrates meat fibers to enhance taste and texture. It works well on chicken, pork, or beef and is often used for dishes like Greek chicken souvlaki.
Meats marinated in this mixture absorb bright, savory, and slightly tangy flavors. The marinade also aids in tenderizing proteins during refrigeration for up to 24 hours. Roasting or grilling after marinating yields juicy, flavorful results. The marinade can be prepared in advance and stored in the refrigerator up to two days for convenience.
For an easy roasted dish, chicken thighs marinated in this blend can be cooked in a casserole with vegetables and potatoes, initially at 400°F then reduced to 375°F until done.
