Chickpea Tuna Salad is a colorful mix of fresh vegetables, chickpeas, tuna and feta cheese! If you're looking for a quick lunch recipe, this is it! It's made with pantry staple ingredients like canned chickpeas and canned tuna, and loaded with vegetables like tomato, onion, cucumber and parsley. If that wasn’t enough it has creamy salty Feta cheese and a tangy Greek Salad Dressing!

Ingredients
- 1 can tuna (120 gram can, drained)
- 1 can chickpeas (19 fl oz can, drained and rinsed well)
- ¼ cup feta cheese (cubed)
- 2 tablespoon red onion (diced)
- 1 cup cherry tomatoes (halved)
- 1 cup English cucumber (cubed)
- 2 tablespoon fresh parsley (minced)
- ¼ cup Greek Salad Dressing (store bought or homemade)
Homemade Greek Dressing
- ⅓ cup extra-virgin olive oil (or neutral oil of choice)
- ½ cup red wine vinegar
- 2 cloves garlic (minced)
- 2 tablespoon lemon juice
- 2 teaspoon dried oregano
- 1 teaspoon salt
- ¼ teaspoon black pepper (or to taste)

Instructions
- Is using homemade Greek salad dressing, prepare by mixing all ingredients together until well combined in a small bowl. Set aside.
- In a large bowl add in all the salad ingredients.
- Pour the salad dressing onto the salad and gently toss until well combined.
- Garnish with additional parsley and Feta cheese, if desired.
- Serve chilled. Enjoy!
