Greek Lemon Oven Roasted Chicken Thighs
Description
This recipe uses a lemon and yogurt-based marinade infused with garlic and oregano to tenderize and flavor chicken thighs. The marinade covers the skin-on, bone-in thighs, which are lightly salted before soaking. After marinating for at least 15 minutes, the chicken is arranged skin side up in a baking dish, coated with the marinade, then partially baked.
Feta cheese cubes, cherry or grape tomatoes, and kalamata olives are added mid-roast, imparting creamy, tangy, and briny accents to the dish. The chicken finishes roasting until cooked through and golden brown, balancing zestiness from lemon and richness from the olives and feta. The skin crisps nicely in the oven.
This roast pairs well with Mediterranean sides like rice, roasted vegetables, or a fresh salad, making for a flavorful and satisfying meal.
It is important to cook chicken to a safe internal temperature of 165°F. The marinade time can be up to 24 hours if desired, enhancing flavor depth.
