Ingredients
- ¼ cup olive oil
- lemon juice about 3 tbsp, juice from 1 lemon
- 2 tablespoons thyme chopped (1 tsp if using dry, fresh
- 3 tablespoons oregano chopped (1 tbsp if using dry, fresh
- 6 cloves garlic minced
- ½ teaspoon salt or to taste
- ¼ teaspoon black pepper or to taste
- 1½ pound baby potato cleaned
- 1 pint cherry tomato
- 1 carrot chopped in big pieces, large
- 2 pounds pork ribs loin
Instructions
- Preheat oven to 400℉.
- In a small bowl whisk together the olive oil, lemon juice, thyme, oregano, garlic, salt and pepper.
- Pour half of the marinade over the potatoes, tomatoes, and carrots and toss well.
- Toss the remaining marinade with the pork.
- Arrange the pork and potatoes on a baking sheet.
- Bake for 30 to 45 minutes, or until the pork is done to your liking and the potatoes are fork tender.
Notes
- If you can't find pre-sliced pork loin ribs, you can simply cut them yourself from a bone-in pork loin. Boneless will work as well if that's more convenient, just make sure the slices you cut are around 1.5" thick.
- If you don't like your cherry tomatoes cooked quite as much as I have done here, leave them out of the oven until the last 15 minutes of cooking.
