Greek Potato Salad

Greek Potato Salad is an easy, healthier potato salad with a Greek vinaigrette dressing, feta cheese, black olives, and tomatoes, perfect for a picnic.

Ingredients

  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 1/2 teaspoons fresh lemon juice
  • 1 teaspoon white sugar
  • 2 teaspoons Greek seasoning or make your own, divided
  • 1/2 teaspoon coarse salt or to taste, divided
  • 1/2 teaspoon ground black pepper or to taste, divided
  • 12 red potatoes
  • 1/2 cup black olives
  • 1/2 cherry tomatoes sliced in half
  • 1/2 cup crumbled Feta cheese

Instructions

  1. Make the Greek Vinaigrette by combining oil, vinegar, lemon juice, sugar, half of Greek seasoning, and half of salt and pepper. The vinaigrette can be done a day ahead.
  2. Drizzle potatoes with oil and sprinkle with salt and pepper, and Greek seasoning; toss to coat. Grill potatoes, covered, over medium heat or broil 4 in. from the heat for 20-25 minutes or until tender.
  3. Place in a large bowl. Add the black olives and tomatoes. Pour the vinaigrette over the tomatoes. Toss to coat. Sprinkle with feta cheese. Serve salad warm or cold.
