Description

Strapatsada begins by grating a ripe tomato into a pan where it gently cooks with olive oil and a pinch of salt to release moisture and reduce sourness. Freshly ground pepper adds mild heat. Crumbled feta cheese is stirred in to blend its salty richness into the tomato base. After the mixture softens, whisked eggs are poured in off-heat and stirred continuously until fluffy and integrated.

The result is a creamy, soft scramble with a bright tomato flavor and tangy cheese contrast. This dish is traditionally enjoyed as a breakfast or light meal and is often accompanied by warm grilled bread to scoop the eggs and soak up the juices.

  • 1 medium-sized tomato ripe
  • 2 tablespoons olive oil
  • 60 grams feta cheese coarsely crumbled
  • 2 large egg

Instructions

  1. In a small mixing bowl whisk the eggs and set aside.
  2. Grate tomato using a hand grater.
  3. Add tomato into a non-stick pan along with the 2 tablespoons of olive oil.
  4. Heat over high heat. Add a pinch of salt and pepper. Cook tomato for 2-3 minutes stirring occasionally with a wooden spatula, until it drains completely. NOTE: Salt dehydrates, therefore, will help the tomato drain while removing some of its sourness. Keep in mind though that you'll be adding salty feta cheese also so don't add too much.
  5. Stir in the feta cheese and cook for a minute more.
  6. Switch heat off and pour in the eggs. Keep stirring until eggs incorporate completely with remaining ingredients and start to look nice and fluffy.
  7. Serve with some warm grilled bread.
