Greek Yogurt Alfredo Sauce
Description
Greek Yogurt Alfredo Sauce combines butter and garlic powder as a flavorful base. Gradually whisking in milk or water cools the mixture before adding Greek yogurt, which contributes a creamy texture and slight tang. Parmesan cheese melts into the sauce, thickening and enriching it. Seasoned with salt, pepper, and optional parsley, the sauce pairs well with 8 ounces of cooked pasta, offering a smooth, comforting coating.
The cooking process gently warms and blends the ingredients, avoiding curdling by removing the pan from heat when incorporating yogurt and reheating only if needed. The sauce’s mild garlic and cheese flavors complement the creamy, tangy yogurt, creating a balanced, velvety texture.
This sauce works well when tossed with freshly cooked pasta for a lightly creamy dish. It provides a variation on traditional Alfredo without heavy cream, making it suitable for those seeking a different flavor profile and consistency.
Leftover sauce should be stored chilled in an airtight container, though it will thicken considerably when cold. Reheating with a small amount of milk or water and stirring until smooth restores the sauce to the right consistency for serving again.
Ingredients
- 2 tablespoons butter
- 1 ½ teaspoons garlic powder
- ½ cup milk I used fat free half & half, or water
- ¾ cup yogurt I used 0% fat, plain, Greek
- ½ - ⅔ cup Parmesan Cheese shredded
- salt to taste
- black pepper to taste
- parsley or 1 teaspoon fresh, dried, optional, ½ teaspoon
- 8 ounces pasta cooked, noodles
Instructions
- In a medium sauce pan, melt butter over medium heat. Stir in garlic powder. Stir in milk (or water). Remove from heat and allow to cool for 2-3 minutes. Gradually whisk in greek yogurt.
- Add parmesan cheese to sauce and stir until melted. (If the cheese doesn't melt completely because the sauce is too cool, return to stove on low for a couple of minutes) Add salt and pepper to taste and toss with your favorite cooked pasta noodles.
Notes
- Store leftover sauce in an airtight container in the refrigerator to maintain freshness.
- The sauce thickens when chilled; add a tablespoon of water or milk and reheat gently to restore its creamy consistency before serving.
