This simple Greek yogurt trifle recipe with fresh berries is a light dessert or breakfast perfect for summer! It's sugar-free, low-carb and gluten-free.

Ingredients
Homemade Low-Carb Cake (suggestion, you may use any vanilla cake)
- ¾ cup protein powder or unflavored whey protein, see notes
- ⅓ cup coconut flour
- ⅓ to ½ to ½ cup powdered sweetener use more if you like it really sweet
- 2 teaspoons baking powder
- 1 pinch salt
- 3 large eggs at room temperature
- ¼ cup butter melted
- ½ cup low-carb milk (any milk works) at room temperature
- 1 teaspoon vanilla extract
Greek yogurt berry trifle ingredients
- 2 cups Greek yogurt
- 1 coop casein protein powder, vanilla flavored (optional) or any other vanilla flavor protein powder
- 2 cups low-carb vanilla cake diced in small cubes (use this low-carb cake recipe or any other cake you like)
- 1 ½ cup berries of choice Chopped fresh strawberries, blueberries and raspberries
Instructions
Homemade low-carb cake for trifle
- Start heating the oven to 320 °F (160 °C) and prepare an 8-inch round pan with a disc of parchment on the bottom and a strip of parchment around the sides. Grease the paper lightly with butter or oil spray.
- Mix all dry ingredients in a large bowl until combined: 3/4 cup protein powder, 1/3 cup coconut flour, 1/3 to 1/2 cup powdered sweetener, 2 teaspoons baking powder and 1 pinch salt.
- Create a well in the middle of the dry ingredients and add 3 large eggs, melted (but not hot) 1/4 cup butter, 1/2 cup low-carb milk and 1 teaspoon vanilla extract.
- Start mixing from the middle and as the eggs are mixed start incorporating the dry mix around it , scraping the sides. If you are using a hand mixer, stop and scrape the sides with a spatula at least a couple of times to ensure every little bit of the batter is well combined.
- Transfer into the pan lined with parchment paper and greased and bake in the preheated oven at 320 °F (160 °C) for about 30 minutes until the top is golden and the cake springs back when you poke a finger in the middle.
How to assemble the yogurt trifle
- Mix the 2 cups Greek yogurt and 1 scoop casein protein powder, vanilla flavored very well until it's smooth and creamy. If you prefer not to add protein, you can use just Greek yogurt. Sweeten it to taste if needed.
- Make the trifle layers: Start with some Greek yogurt so the cake isn't dry on the bottom. Then layer cake, berries, and yogurt. Repeat until the trifle glasses or dish is full. Finish with some berries on top to make it pretty!

- This recipe makes 4 1-cup servings of yogurt trifle. If you wish to make it in a large trifle dish for 8 servings, just double the amount of ingredients.
- To make 4 individual trifles, each requiring 1/2 cup of cubed cake (totaling 2 cups), you will need about 2 slices or one-fourth of a 8" cake. Enjoy the rest of the cake, or make more trifles!
- If you're making the cake recipe above, this protein baking blend ratio of 60% whey to 40% casein is the one that gives the best results. You can also use pure unflavored whey protein.
