The recipe offers a rich breakfast or brunch option featuring fresh and vibrant flavors.

Description

Greek Yogurt Blueberry Waffles combine a traditional waffle batter with full-fat Greek yogurt, lending moisture and a slight tang to the waffles. The inclusion of fresh or frozen blueberries folded into the batter adds bursts of fruity flavor. The waffles are cooked on a preheated iron until golden and crispy outside while tender inside, achieving a balanced texture.

The accompanying fresh blueberry sauce is prepared by simmering blueberries with orange juice and maple syrup, then thickened with cornstarch diluted in the remaining orange juice. This sauce adds a warm, fruity topping that complements the subtle tang of the yogurt waffles, enhancing their flavor and moisture.

This dish serves well for breakfast or brunch, offering a satisfying fruit-forward meal. The waffles pair nicely with the fresh sauce, which can also be stored for leftovers or served with other breakfast items.
