Green Chile Egg Casserole Recipe

This easy green chile egg casserole is packed with protein from the cottage cheese, eggs and cheese. Filling and satisfying breakfast or brunch entree.

Ingredients
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 10 eggs lightly beaten
- 1/2 stick butter melted and cooled
- 2 cups small curd cottage cheese
- 16 oz. Monterey jack cheese grated
- 3, 4 oz. cans of diced green chilies
Instructions
- Preheat oven to 350°F.
- Lightly grease a 9 X 13-inch shallow baking dish.
- Whisk together flour and baking powder.
- Add eggs, and cooled butter, blending well.
- Add in remaining ingredients; cottage cheese Monterey jack cheese and green chilies. Salt to taste.
- Pour mixture into the prepared baking dish, and bake for 35-45 minutes or until set.
Notes
- For a golden brown top and crispy edges, turn on the broiler for a few minutes right before serving.
- You can also make this recipe with other types of chilies, such as jalapenos if you like more of a kick.
- Make sure that you grease or spray your casserole dish well with nonstick cooking spray so that clean-up is easy.
- Garnish this egg bake with green onions, sour cream, and salsa, or serve plain.
