A greens packed salad with a creamy dreamy dressing!

Ingredients
- 2 cups kale shredded
- 1 cup cucumber chopped
- 1 cup peas
- 1/2 cup broccoli chopped
- 1/3 cup green onions chopped
Dressing
- 1 large avocado
- 1/4 cup fresh basil packed, approximately .25 oz
- 1 large garlic clove
- 2 tablespoons apple cider vinegar
- 1 tablespoon lemon juice
- 1/2 teaspoon kosher salt
- 2 teaspoons nutritional yeast
- 2 tablespoons water

Instructions
- Create the dressing by adding all ingredients into a food processor or blender and blending until creamy.
- Add salad ingredients, kale, cucumber, peas, broccoli, and onions to a bowl and mix.
- Add dressing and mix well.
- Enjoy!

- Dressing: Prepare dressing in advance and store in the fridge in an airtight container for up to 5 days.

- Protein: Add chickpeas, or if it doesn't need to be vegan, add some grilled chicken, or shrimp.
- Nutritional Yeast: We have made this dressing without this and it's still tasty, but it's just not as tasty. But you can make it without and still have a tasty salad.
