Green Tea Chai
Description
Green Tea Chai is made by steeping green tea leaves or bags in hot water kept around 80°C to avoid bitterness. After removing the tea, chai syrup is added to impart traditional chai spices and sweetness. The drink is then combined with milk which can be gently heated or frothed to a latte-style texture. The chai syrup may be prepared by boiling spices like cinnamon, cardamom, ginger, and sweeteners, or an alternative mix of spices can be used to personalize the flavor. The result is a pleasantly spiced, creamy beverage with subtle tea notes.
The texture is smooth and creamy, with mild spice warmth balanced by the fresh green tea character. Preparing the milk with froth enhances its mouthfeel, and a light dusting of cinnamon on top can add an aromatic accent. It is best served fresh, ideally alongside simple cookies or snacks, making it suitable for an afternoon refreshment or a gentle warming drink.
For storage, it is recommended to make the chai fresh; however, leftover tea can be refrigerated for up to 24 hours and gently reheated, with milk frothing restored before serving. Adjust sweetness as preferred, and experiment with different dairy or plant-based milks. The recipe allows flexibility in the spice blend and sweetener used.

Instructions
Brewing the Chai Green Tea
- Steep the green tea in hot water around 80C/ 176F for 3-5 minutes. Don't use boiling water or leave it for too long as this may turn the tea bitter.Remove the tea bags (or tea leaves, if using.)
- Tip: Use an infuser with the tea leaves to make removing them easier!
- Add the Chai Syrup to the green tea. See notes if not using Chai Syrup.
Assembling with milk
- Pour the milk into the Green Tea Chai. Serve with some cookies on the side and enjoy! Tip: Before pouring in the milk, froth it up using an immersion blender, milk frother, whisk or just shake vigorously in a sealed mason jar. Alternatively, you can assemble the complete drink then pour it from cup to cup, to create the foam the traditional way! (This is called "pulling" the tea.)
- Optional: to make cafe-style Green tea Chai Latte, sprinkle some cinnamon powder on top of the foamy milk!
Notes
- When not using prepared chai syrup, boil spices such as cinnamon, cardamom, and ginger for 10-15 minutes to create the base, adding sweeteners like honey or maple syrup to taste.
- Use an infuser for tea leaves to ease removal and avoid bitterness by steeping at about 80°C for 3-5 minutes.
- Reheat leftover chai gently and froth the milk again to restore foam before serving.
- Substitute milk with plant-based alternatives like oat or almond milk, ensuring sweeteners are vegan-friendly if desired.
