Indian Bombay Potatoes and Peas
Description
The Indian Bombay Potatoes and Peas recipe combines halved baby Yukon Gold potatoes boiled until tender with a vibrant blend of spices including yellow mustard seeds, cumin seeds, turmeric, coriander, garam masala, and cayenne pepper. Butter acts as the cooking medium, bringing warmth and richness to the dish. The inclusion of garlic and ginger adds depth and aromatic complexity. Peas are stirred in at the end to add a subtle sweetness and contrasting texture. The potatoes absorb the spices and butter, resulting in a dish that is warmly spiced with both earthy and slightly pungent notes.
This side dish complements Indian meals well and can be served alongside rice, flatbreads, or curries. Its comforting texture and blend of spices make it suitable as a standalone vegetarian option or as an accompaniment to a wider dinner plate.
