Green Thai Curry

Green Thai Curry is a delicious dinner with chicken, vegetables, herbs, and a creamy, spicy coconut milk sauce, perfect for a weeknight meal.

Ingredients

  • 2 tablespoons olive oil
  • 1 ½ pounds chicken breast cut into 1-inch pieces, boneless, skinless
  • ½ teaspoon salt plus more to taste
  • ¼ teaspoon black pepper plus more to taste
  • 1 onion thinly sliced, small
  • 1 tablespoon ginger minced
  • 2 garlic minced, cloves
  • 1 jalapeño minced
  • 2 tablespoons green curry paste prepared
  • 2 (14.5 ounce) cans coconut milk
  • 1 green pepper thinly sliced
  • 1 small cauliflower cut into florets, head
  • 1 tablespoon lime juice fresh
  • ¼ cup cilantro chopped
  • ¼ cup basil chopped, fresh
  • white rice for serving, steamed

Instructions

  1. Add olive oil to a large, heavy-bottomed pot and set over medium-high heat. Season the chicken with salt and pepper. Add chicken and stir fry for about 6 minutes, or until golden brown. Remove from the pan with a slotted spoon and set aside. Chicken will not be cooked through.
  2. Add onion to the same pot and cook for 6 to 8 minutes, or until the onions are softened and golden brown. Add ginger, garlic and jalapeño (if using) and cook for 1 minute more, or until very fragrant. Season with ½ teaspoon salt and ¼ teaspoon pepper
  3. Add the green curry paste, stirring with a wooden spoon to coat all of the aromatics with curry paste. Add the coconut milk, and bring to a simmer.
  4. Add green pepper, cauliflower and chicken to the pot and cover and cook at a simmer for 5 to 7 minutes, or until the vegetables are tender and the chicken is cooked through.
  5. Remove from heat and stir in lime juice, cilantro and basil before serving with steamed rice or noodles.
