Description

Grilled Carne Asada is prepared by marinating thin slices of beef or skirt steak in a combination of olive oil, cider vinegar, beef broth, orange and lime juices, and chopped onion. Added aromatics include diced chili peppers, jalapeño, soy sauce, Worcestershire sauce, cilantro, minced garlic, chipotle chili powder, green Tabasco sauce, and Mexican oregano, which together deliver a complex and balanced marinade.

After marinating for 1 to 8 hours, the beef is grilled briefly on medium-high heat for about 1 to 2 minutes per side. This short cooking time ensures the meat cooks quickly due to its thinness, resulting in a juicy interior with a slight char. Once cooked, it is sliced thinly and served, commonly accompanied by tortillas, rice, or salad.

  • 2 pounds carne asada sliced very thin, or skirt steak

Marinade

  • 1/4 cup olive oil
  • 1/4 cup cider vinegar
  • 1/4 cup beef broth
  • orange juice juice of 1/2 orange
  • lime juice of 1
  • 1/4 cup onion chopped
  • 4 ounces Chili pepper diced
  • 2 tablespoons jalapeño diced
  • 2 tablespoons soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1/2 bunch cilantro stemmed and chopped, bunch
  • 4 cloves garlic minced
  • 1 teaspoon chipotle chili powder
  • 1 teaspoon green Tabasco sauce
  • 1/2 teaspoon Mexican oregano ground

Instructions

  1. Combine marinade ingredients and place in a Ziplock bag.
  2. Add the beef to the bag, separating slices of beef so they get evenly covered. Squeeze out all the air from the bag and seal tightly. Allow to marinate at least 1 hour or up to 8 hours.
  3. Heat grill to medium high and place meat on grill for about 1-2 minutes on each side.
  4. The beef is thin and will cook quickly, remove from grill, slice thinly, and serve on your favorite dishes.
