Grilled Chicken:

  • 4 boneless, skinless chicken breasts
  • 2 teaspoons chili powder
  • ¼ teaspoon kosher salt

Mango Avocado Salsa:

  • 1 cup diced mango
  • 1 cup diced Haas avocado,
  • ¼ cup finely chopped red onion
  • 1 tablespoon finely chopped jalapeno pepper
  • 2 tablespoons chopped cilantro
  • 1 tablespoon lime juice
  • kosher salt and black pepper
  • Oil for brushing the grill

Instructions

  1. Sprinkle the chili powder and salt evenly over the chicken breasts, patting it in so that it adheres. Heat a grill or grill pan over medium high heat. Brush with oil. Grill the chicken, about 4-5 minutes on each side, until cooked through to an internal temperature of 165°F. Remove from grill.
  2. To make the salsa, mix the mango, avocado, onion, jalapeno, cilantro, and lime juice together in a medium bowl. Season salsa to taste with a pinch of salt and pepper.
  3. Arrange chicken on a serving platter and top with the mango salsa.

  • I use chili powder on the chicken but you can substitute other dried spices like paprika, cumin, garlic powder, onion powder or cayenne pepper.
  • The best way to make sure the chicken is cooked is to check it with an instant-read thermometer. The chicken is done when it reaches an internal temperature of 165°F.
  • Let the chicken rest for 5-10 minutes before slicing into it to allow the juices to redistribute.
  • Leftover grilled chicken with mango salsa makes a delicious filling for tacos and quesadillas or topping for a burrito bowl.
