Instructions
- Sprinkle the chili powder and salt evenly over the chicken breasts, patting it in so that it adheres. Heat a grill or grill pan over medium high heat. Brush with oil. Grill the chicken, about 4-5 minutes on each side, until cooked through to an internal temperature of 165°F. Remove from grill.
- To make the salsa, mix the mango, avocado, onion, jalapeno, cilantro, and lime juice together in a medium bowl. Season salsa to taste with a pinch of salt and pepper.
- Arrange chicken on a serving platter and top with the mango salsa.
Notes
- instant-read thermometer
- quesadillas
- I use chili powder on the chicken but you can substitute other dried spices like paprika, cumin, garlic powder, onion powder or cayenne pepper.
- The best way to make sure the chicken is cooked is to check it with an instant-read thermometer. The chicken is done when it reaches an internal temperature of 165°F.
- Let the chicken rest for 5-10 minutes before slicing into it to allow the juices to redistribute.
- Leftover grilled chicken with mango salsa makes a delicious filling for tacos and quesadillas or topping for a burrito bowl.
