This Grilled Chipotle Chicken with Pineapple Salsa is the perfect summer recipe! Chicken breasts are marinated in a chipotle lime mixture, grilled, and then topped off with an easy pineapple salsa you'll want to put on everything. Easy and delicious.

Ingredients
- 2 pounds boneless skinless chicken breasts
- 3 tablespoons lime juice
- 2 tablespoons maple syrup
- 2 teaspoons adobo sauce
- 1 chipotle pepper from a can of chipotle in adobo
- ¼ cup olive oil
- ½ teaspoon salt
Pineapple Salsa
- 1 ½ cups chopped fresh pineapple
- 2 teaspoons lime juice
- 1 teaspoon maple syrup
- ¼ cup diced red onion
- 2 tablespoons finely chopped fresh cilantro
- 2 tablespoons finely diced jalapeno
- ¼ teaspoon salt
Instructions
- Add 2 pounds boneless skinless chicken breasts, 3 tablespoons lime juice, 2 tablespoons maple syrup, 2 teaspoons adobo sauce , 1 chipotle pepper from a can of chipotle in adobo, ¼ cup olive oil, and ½ teaspoon salt in a large ziplock bag. Seal the back tightly closed and massage the marinade into the chicken. Refrigerate for 2-5 hours.
- After the chicken has marinated, preheat the grill to medium-high heat.
- Remove the chicken from the marinade and let any excess drip off. Grill the chicken for about 10-12 minutes, flipping it over halfway through, until the thickest part reaches 165 degrees Fahrenheit and it has a nice char on it.
- Prepare the pineapple salsa by combining 1 ½ cups chopped fresh pineapple , 2 teaspoons lime juice, 1 teaspoon maple syrup, ¼ cup diced red onion, 2 tablespoons finely chopped fresh cilantro , 2 tablespoons finely diced jalapeno, and ¼ teaspoon salt. Season with additional salt and pepper to taste.
- Serve the chicken warm with pineapple salsa on top.
