Grilled Corn + Avocado Pasta Salad

This fresh and delicious avocado pasta salad is the perfect pot luck recipe, meal prep recipe, or to make as a side dish for your next BBQ.

Ingredients
For the Salad:
- 3 cups pasta I used Fusilli, cooked
- 1 cup corn on the cob grilled
- 1 tbsp umami spice optional
- ½ cup cilantro fresh, chopped
- ¼ cup green onion chopped, fresh
- 1 avocado cut into chunks, large, Mission Produce brand
Dressing:
- 3 tbsp. olive oil
- lemon juice of one large lemon
- 2 tbsp. honey
- 2 tsp salt sea salt
- 1 tsp red pepper flakes
- 1 tsp black pepper
Instructions
- Prepare the salad by slowly adding/layering all the ingredients to a large bowl.
- To make the dressing, simply add all the ingredients to a medium bowl and mix together till combined.
- Serve with your desired dressing and mix till combined.
Notes
- If you’re making the salad in advance, mix together all the ingredients apart from the avocados. Add those last to ensure ripeness and freshness. Same goes for meal prepping and lunches.
