Grilled Feta and Spinach Sandwich

A delicious Mediterranean twist on this classic sandwich makes it a whole lot healthier and heartier: whole-grain bread grilled with tangy,feta cheese, and plenty of spinach grilled to perfection.

Ingredients
- 1 ½ -2 ounces (45-60 g) of feta
- 3-4 oz (100-120g) frozen spinach
- 1-2 tbsp extra virgin olive oil
- 1 pinch of fine sea salt
- ¼ tsp dry or fresh dill
- 2 large slices of whole-grain bread

Instructions
- Slice the feta thinly.
- In a small pan heat 1 tsp extra virgin olive oil, once hot add the spinach, a pinch of salt, freshly ground pepper, and the dill. Sauté the spinach for a few minutes until the liquids have evaporated.
- Brush both sides of both slices of bread with olive oil.
- Warm a medium pan under medium heat and place one slice of bread in the pan, layer with a few slices of the feta, top with the spinach and then continue layering with the rest of the cheese.
- Grill for about 3 to 4 minutes until bread has browned, flip to the other side and grill for a few more minutes until cheese is soft and somewhat melted.
- Remove from pan and serve
