For the Marinade:

  • ¼ cup olive oil
  • 2 tablespoons balsamic vinegar
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon salt
  • ½ teaspoon black pepper

For the Skewers

  • 1 medium red bell pepper cut into 1-inch pieces
  • 1 medium yellow bell pepper cut into 1-inch pieces
  • 1 medium green bell pepper cut into 1-inch pieces
  • 1 medium red onion cut into wedges
  • 2 medium zucchini sliced into thick rounds
  • 1 cup cherry tomatoes
  • 8 ounces mushrooms whole or halved if large

Instructions

  1. In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, dried oregano, dried basil, salt, and black pepper.
  2. Place the red bell pepper, yellow bell pepper, green bell pepper, red onion, zucchini, cherry tomatoes, and mushrooms in a large bowl. Pour the marinade over the vegetables and toss to coat them evenly. Let them marinate for at least 15 minutes.
  3. Preheat your grill to medium-high heat.
  4. Thread the marinated vegetables onto skewers, alternating the types of vegetables for a colorful presentation.
  5. Place the skewers on the preheated grill and cook for 8-10 minutes, turning occasionally, until the vegetables are tender and slightly charred.
  6. Serve the grilled veggie skewers hot as a side dish or main course.

Notes

  • Cut the vegetables into even sizes to help them cook evenly on the grill.
  • If using wooden skewers, soak them in water for 30 minutes before grilling to prevent burning.
  • Marinate the vegetables for at least 15 minutes, but longer marinating will enhance the flavor.
  • You can cook these skewers in the oven or air fryer if you don’t have a grill.
