Ground Beef Stuffed Peppers

These bell peppers are filled to the brim with ground beef, rice, and veggies, then baked to perfection in a creamy, tomato-ey sauce. You're sure to be stuffed after this mouthwatering meal!

Ingredients
- 6 bell peppers
- 2 cups cooked rice
- 2 lbs ground beef
- 2 tbsp oil olive or avocado
- 1 large onion diced
- 2 large carrots grated
- 1 tbsp salt adjust to taste
- 1 tsp ground black pepper adjust to taste
- 1 cup tomato sauce
- 1 cup Half & Half
- 1 cups chicken broth
Instructions
- Slice each bell pepper in half vertically, through the middle of the stem. Remove the stem and the seeds from the peppers. Dice the onion and shred the carrots.
- Preheat a pan over medium heat with oil. Sauté the onion and carrots until golden brown.
- In a large bowl, mix together rice, beef, salt, pepper, and sautéed veggies.
- Stuff each halved pepper with the filling. Place the stuffed peppers into a baking dish.
- In a separate bowl, combine tomato sauce, half & half and chicken broth.
- Pour the tomato sauce mixture into the pan with the peppers. Cover the pan with a lid or foil. Bake at 400°F for about 45 minutes until the peppers are tender. Remove from the oven and enjoy!
