Gruyere, Slow Roasted Tomato, and Caramelized Onion Grilled Cheese

Ingredients

  • Slow roasted cherry tomatoes (click the link up above for the recipe)
  • 1-2 tsp olive oil
  • ¼ sweet yellow onion sliced thinly
  • 2 lices of French bread
  • butter to taste
  • gruyere cheese sliced

Instructions

  1. Make the slow-roasted cherry tomatoes - click the link up above for the recipe.
  2. Make the caramelized onions by heating the olive oil in a small skillet over medium heat.
  3. Add the onion and cook, stirring often, for 10 minutes, or until golden brown.
  4. Season with a bit of sea salt, to taste.
  5. Spread butter over one side of a piece of the French bread and place it into a skillet over medium heat.
  6. Add a thin layer of Gruyere cheese on the bread, then spoon some of the slow-roasted cherry tomatoes and garlic on top, followed by a layer of caramelized onions.
  7. Top with more Gruyere cheese slices followed by the remaining piece of French bread.
  8. Spread butter on the top of the bread and cook for 3-4 minutes, or until golden brown.
  9. Carefully flip over and cook for an additional 3 minutes, or until golden brown.
  10. Remove from the skillet and serve immediately. Enjoy!
