Ingredients
- 4 ripe avocados (soft but not mushy to the touch)
- ¼ yellow onion, diced **Red or sweet onion will work too
- 1 handful of cilantro leaves, chopped
- 1 jalapeno or serrano, finely diced
- 3 cherry tomatoes, diced (optional)
- 1 large clove of garlic, minced
- 1-2 limes, juiced, to taste
- sea salt, to taste
Instructions
- Slice the avocados lengthwise around the seed. Gently hit the blade of the knife on the half of the avocado with the seed and twist–the seed should come out easily.
- Either scoop out the avocado flesh with a spoon or dice it into segments in a crosshatch pattern and then remove it with a spoon into a bowl.
- Add the remaining ingredients together without smashing the avocado too much. Side Note: Make sure to add the lime, it not only pops the flavor of the guacamole but also keeps the guacamole from going brown.
- Serve with fresh tortilla chips or as a topping for any of your favorite Mexican dishes.
