This Ham and Cheese Strata with Broccoli is a cinch to put together, and is a filling and delicious breakfast recipe.

Ingredients
- 1 tablespoon extra virgin olive oil
- 1 medium onion diced
- 12 oz frozen broccoli thawed
- 1 14 oz loaf French bread cut into cubes
- 1/2 lb fully cooked ham chopped
- 6 large eggs lightly beaten
- 1 1/2 cups milk
- 2 tablespoons chopped chives
- 1 tablespoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 1/2 cups shredded cheddar cheese

Instructions
- Heat oven to 375°F. Coat a 2 to 3-quart baking dish with nonstick spray.
- Heat oil in a large nonstick skillet over medium heat. Add onion and cook 5 minutes. Add broccoli and cook another 3 minutes.
- Place bread cubes in a large bowl. Stir in broccoli-onion mixture and the ham.
- In a medium bowl, whisk together the eggs, milk, chives, mustard, salt and pepper. Pour over bread mixture, stirring to mix. Transfer to prepared dish, and top evenly with cheese.
- Bake at 375° for 40 to 45 minutes, or until the center of the strata is set and the cheese is melted and bubbly. Let the strata cool for a few minutes before serving.
Notes
- very slightly adapted from Family Circle November 1, 2010
- You can also assemble this casserole the night before, then bake it the next morning. Let it sit out at room temperature before transferring it to the oven.
