  • 6 large eggs
  • 1/4 cup half-and-half
  • 1/2 tablespoon hot sauce
  • 1/4 cup green onions sliced
  • salt and pepper to taste
  • 1/2 tablespoon avocado oil
  • 1 cup cooked ham diced
  • 1/2 cup yellow onion diced
  • 2 cloves garlic minced
  • 1 1/2 cups fresh baby spinach chopped
  • 1 9-inch pie crust unbaked
  • 1/2 cup white sharp cheddar cheese shredded

Instructions

  1. Preheat oven to 400°F.
  2. In a large mixing bowl, whisk together eggs, half-and-half, hot sauce, green onions, salt, and pepper until well combined. Set aside.
  3. Heat avocado oil in a large skillet over medium-high heat. Add diced ham and cook for 2-3 minutes until slightly browned.
  4. Add the diced yellow onion and minced garlic to the skillet, sautéing for 3-5 minutes, until the onion is translucent.
  5. Stir in the chopped baby spinach and cook for about 1 minute until wilted, then remove the skillet from heat.
  6. Transfer the ham and spinach mixture to the pie crust, and sprinkle the shredded sharp cheddar cheese on top.
  7. Pour the egg mixture evenly over the quiche, ensuring the green onions are spread out. Bake in the preheated oven for 20-25 minutes, until the crust is golden and the egg is set.
  8. Remove from oven and let quiche cool for 10 minutes. Slice and serve while warm.
