Ingredients

  • 2 tsp olive oil
  • 2 tsp butter
  • ½ cup orzo pasta
  • ½ onion diced
  • ¾ cup Italian ham diced
  • 2 garlic minced, cloves
  • 3 cups chicken stock
  • ½ cup water
  • 1 tsp Italian seasoning
  • 7.5 oz fire-roasted tomatoes with juice
  • 15 oz cannellini beans rinsed and drained
  • salt to taste
  • black pepper to taste
  • red pepper flakes optional
  • Parmesan Cheese optional
  • basil optional, fresh
  • parsley optional, fresh

Instructions

  1. Assemble your ingredients.
  2. Heat a large saucepot. Once hot, add olive oil and melt the butter.
  3. Add orzo, onions, ham, and garlic. Fry for a 3 minutes.
  4. Then, add the remaining ingredients, except for salt and other optional ingredients.
  5. Bring to a boil and lower the heat once boiling. Simmer for 20 minutes until the soup has thickened.
  6. Season with salt and pepper. Add optional ingredients if you like.
