Ingredients
- 1 pound ground beef or ground turkey
- 6 ounces center cut bacon
- 1 medium onion, diced
- 1 medium green pepper, diced
- 2 teaspoons minced garlic
- 1 teaspoon minced ginger
- ¾ cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon apple cider vinegar
- ½ teaspoon hickory-flavored liquid smoke
- 2 tablespoons soy sauce
- ⅓ cup pineapple juice
- Salt, to taste
- pepper, to taste
- pineapple rings, optional
- red onion rings, optional

Instructions
- In a large skillet over medium-high heat, cook the bacon until crisp. Transfer it to a paper towel-lined plate.
- Returning the to same skillet, add the ground beef, onion, and bell pepper. Cook until brown and cooked through.
- Whisk the ketchup, pineapple juice, brown sugar, vinegar, liquid smoke, and soy sauce in a small bowl. Stir the sauce into the meat mixture. Bring the mixture to a simmer and reduce heat to low. Simmer for 5 minutes until the sauce starts to thicken.
- Crumble the bacon and stir it into the meat mixture. Season with salt and pepper to taste.
- Serve on Hawaiian rolls or hamburger buns. Garnish with pineapple rings and red onions, if desired.
