Healthier Tater Tot Casserole

This Healthier Tater Tot Casserole is comfort food to it's core! Made with lean ground beef, a creamy and cheesy filling and topped with crispy tater tots, it's an easy casserole dish that's ready in less than an hour and the whole family will love!

Ingredients
- 1 tsp olive oil
- 3 garlic cloves minced - I used frozen cubes
- 8- oz. sliced mushrooms
- 1 medium white onion (200g) diced
- 2 lb. lean ground beef I used 96/4
- 3/4 cup ketchup (180g) I used no sugar added
- 2 Tbsp yellow mustard (30g)
- 1 Tbsp Worcestershire sauce
- 1.5 cup shredded 2% sharp cheddar (168g) divided
- 28- oz. frozen tater tots
- For serving: ketchup, hot sauce, sour cream, sliced green onions, etc.

Instructions
- Preheat the oven to 400 degrees F. Add olive oil and garlic to a large skillet and set to medium heat.
- Once shiny, add onions and mushrooms and cook for 4-5 minutes or until they start to soften. Then transfer to a 9x13-inch casserole dish.
- Add the ground beef to the skillet and cook, breaking into crumbles as you go until no longer pink; about 6-7 minutes.
- Transfer beef mixture to the casserole dish along with 1/2 cup shredded cheese and toss evenly with the onions and mushrooms; Stir in the ketchup, mustard and worcestershire sauce and season with salt and pepper to taste (I added 1/2 tsp salt); smooth out into an even layer.
- Top with the remaining shredded cheese, and then the tater tots.
- Bake for 25-30 minutes, or until the cheese is melted and the tater tots are golden brown on top.
- Serve hot with ketchup or hot sauce, sour cream and green onions if desired, and enjoy!
Notes
- Not necessary but just an FYI, if you let this casserole sit for 20-30 minutes, the tater tots will come together and it's easier to serve this tater tot casserole as a “piece” of casserole. Either way it's yummy!
