Healthy Chicken and Vegetable Stir Fry with Peanut Sauce

Ingredients

Servings

Peanut Sauce

  • 1 cup peanut butter
  • 1 tbsp garlic
  • 1/4 cup oyster sauce
  • 1/4 cup chicken stock
  • 1 tsp tamari or low sodium soy sauce
  • 1 tsp cornstarch

Chicken and Vegetables

  • 2 tsp canola oil
  • 1 bag Mann's Fresh Vegetables California Stir Fry
  • salt and pepper to taste
  • 2 chicken breast diced

To serve/Optional

  • 4 cups cooked rice or your choice of carbs

Instructions

  1. In a small sauce pan, mix together your peanut butter, garlic, oyster sauce, tamari, chicken stock, and cornstarch. Let this simmer on low and stir occasionally.
  2. While the sauce is simmering, in a pan, add your 1 tsp of oil and sauté your California Stir Fry veggies until softened, season with salt and pepper. Set it aside.
  3. Add the rest of your oil into the now empty pan and cook your chicken until it's cooked through - season with salt and pepper to taste.
  4. Once the chicken is done cooking, combine the vegetables back into the pan and pour in your peanut sauce. Cook for another minute or so until everything has been coated with the sauce.
  5. Serve with rice or your choice of carbs.
