Description
This fish pie uses a combination of salmon, smoked haddock, and prawns gently cooked in whole milk with fresh parsley. The milk is then thickened with a cornflour slurry and enriched with cream cheese, sweetcorn, and sliced leek. This forms a creamy, flavorful filling with a delicate seafood taste and soft texture.
The fish is flaked and spread in a baking dish, topped with the sauce, then covered with smooth mashed potatoes blended with Dijon mustard, butter, and sharp cheddar cheese. Baking creates a golden crust and combines the layers into a cohesive dish with a rich, creamy texture and mild seafood flavors.
You can serve this pie as a filling family meal. It pairs well with simple steamed vegetables or a green salad. Adjust the sauce thickness as needed, and customize the topping texture by adding breadcrumbs for more crunch.
Tip: Using supermarket fish pie mix can save preparation time; ensure it is fully defrosted before cooking. Add a bit of white wine to the sauce for extra flavor. For a crispier topping, sprinkle panko and cheese over the mash.
Ingredients
Fish pie
- 240 g salmon fillet
- 220 g smoked haddock
- 150 g king prawns
- 250 ml milk whole
- 150 g cream cheese
- 130 g sweetcorn
- 1 leek sliced
- 10 g parsley chopped, fresh
- 1 pinch sea salt
- 1 pinch black pepper
Slurry
- 1 tablespoon milk whole
- 1 tablespoon corn starch aka cornflour
Mashed potatoes
- 800 g potato
- 4 tablespoon butter
- 1 teaspoon Dijon mustard
- 100 g cheddar cheese grated
Instructions
- Preheat your oven to 200°C/180°C(fan)/400°F/Gas 6.
- Mix 1 tablespoon Whole milk and 1 tablespoon Cornflour (corn starch) together and set aside.
- Add 800 g Potato to a pan of boiling water and simmer for 12-15 minutes.
- Put 250 ml Whole milk into a pan and put 240 g Salmon fillet, 220 g Smoked haddock, 150 g King prawns and 10 g Fresh parsley into it. Bring the milk to the boil and then simmer for 5 minutes.
- Using a slotted spoon, lift the fish out and place in a large baking dish. Mix round so the fish flakes up.
- Stir the cornflour mix and add to the milk with 130 g Sweetcorn, 1 Leek, 150 g Cream cheese and 1 pinch Sea salt and ground black pepper. Mix until the cream cheese melts.
- Drain the potatoes and mash them with 1 teaspoon Dijon mustard and 4 tablespoon Butter.
- Pour the milk mixture over the fish and stir to distribute everything evenly.
- Top with the mashed potatoes and sprinkle with 100 g Cheddar cheese.
- Put in the oven for 30-40 minutes. Put under the grill for 5 minutes to crisp the top.
Notes
- Supermarket fish pie mix can be used but must be fully thawed before preparation.
- Adjust sauce thickness by adding extra cornflour if needed.
- For a crisp topping, add a mix of panko breadcrumbs and grated cheddar cheese on top of the mashed potatoes.
- A splash of white wine in the sauce can enhance the flavor.
