Ingredients

  • 6 oz toasted coconut almonds
  • 8 oz mejool dates pitted
  • ½ cup dried cherries or extra dates if desired
  • ¼ cup unsweetened shredded coconut
  • 1-3 TBSP pure maple syrup adjust to taste
  • 1 cup plain greek yogurt
  • 1-2 cups Fresh fruit see below
  • zest of 1 lime to taste

  • peaches

Instructions

  1. Soak dates in warm water for 10 minutes to soften.
  2. Add almonds to a food processor and pulse a few times until roughly chopped.
  3. Drain dates and add to the food processor with the almonds.
  4. Add cherries and shredded coconut.
  5. Add maple syrup, to taste.
  6. Blend to desired texture, scraping down the sides as needed.
  7. Line 4 mini tart pans (see post below for more options and variations) with squares of parchment paper and equally distribute your date + almond mixture atop the parchment.
  8. Using an additional square of parchment paper, press the mixture into your tasty no-bake crust.
  9. Top each with a hearty dollop of yogurt and fresh fruit.
  10. Sprinkle each tart with as much lime zest as your heart desires + dig in!

Notes

  • Soaking the dates helps to soften them for easy blending, without this step the mixture can be a bit dry and crumbly.
  • For even more lime flavor, you can even grate a little lime zest into the coconut-almond-date mixture. Bam! I went a little nuts zesting lime over the top of these bad boys; I love the pop of citrus!
