- ¼ cup unsweetened shredded coconut
- 1-3 TBSP pure maple syrup adjust to taste
- 1 cup plain greek yogurt
- 1-2 cups Fresh fruit see below
- zest of 1 lime to taste
FRUITY FAVORITES:
- strawberries
- blueberries
- raspberries
- mandarin oranges
- pineapple
- peaches
- banana
- kiwi
Instructions
- Soak dates in warm water for 10 minutes to soften.
- Add almonds to a food processor and pulse a few times until roughly chopped.
- Drain dates and add to the food processor with the almonds.
- Add cherries and shredded coconut.
- Add maple syrup, to taste.
- Blend to desired texture, scraping down the sides as needed.
- Line 4 mini tart pans (see post below for more options and variations) with squares of parchment paper and equally distribute your date + almond mixture atop the parchment.
- Using an additional square of parchment paper, press the mixture into your tasty no-bake crust.
- Top each with a hearty dollop of yogurt and fresh fruit.
- Sprinkle each tart with as much lime zest as your heart desires + dig in!
Notes
- Soaking the dates helps to soften them for easy blending, without this step the mixture can be a bit dry and crumbly.
- For even more lime flavor, you can even grate a little lime zest into the coconut-almond-date mixture. Bam! I went a little nuts zesting lime over the top of these bad boys; I love the pop of citrus!
