Ingredients
For the Chicken:
- 2 large chicken breasts 1 to 1.5 lbs
- 1 large egg
- 1/2 cup cassava flour or gluten-free flour blend
- 2 Tbsp avocado oil
- 1/2 red onion chopped
- 1/2 red bell pepper chopped
- 1/2 green bell pepper chopped
- 3 stalks green onion chopped
- 1 Tbsp sesame seeds optional
Paleo Sweet and Sour Sauce:
- 1/2 cup pineapple juice
- 3 Tbsp honey
- 1/2 cup rice vinegar or cider vinegar
- 2 tsp tapioca flour
- 1/3 cup unsweetened ketchup
- 1 to 2 Tbsp Sriracha to taste
- 1 Tbsp Coconut aminos or liquid aminos
- 2 cloves garlic
- 1/2 tsp sea salt to taste
Instructions
- Add the ingredients for the sweet and sour sauce to a blender and blend until combined. Set aside until ready to use.
- Chop the chicken into bite-sized pieces.
- In a mixing bowl, whisk one egg.
- Add the chopped chicken to the mixing bowl with the egg and stir well until the chicken pieces are well-coated in egg.
- Stir in the cassava flour (or gluten-free flour) to the mixing bowl and stir together until chicken is well-coated in flour.
- Heat the avocado oil to high in a large skillet.
- Add the chicken and cook, stirring occasionally, until chicken has browned, about 5 minutes.
- Add the chopped vegetables and stir well.
- Cook, stirring occasionally, until vegetables begin to soften, about 2 to 3 minutes.
- Pour in the sweet and sour sauce and bring mixture to a full boil. Cook stirring occasionally, until chicken is cooked through and the sauce is very thick, about 5 minutes. Taste chicken for flavor and add sea salt and/or sriracha to taste.
- Garnish with chopped green onion and sesame seeds.
- Serve with choice of side dishes and enjoy!
