This herb crusted salmon is a dish that is sure to impress! The succulent fish is coated in a seriously delicious mix of herbs, parmesan, and crisp breadcrumbs, then baked to perfection. The flavors are incredible and will have everyone asking for seconds!

Ingredients
- 1 cup Panko bread crumbs
- 2 tablespoons parmesan
- 1 teaspoon parsley
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon Dill
- ¼ teaspoon rosemary
- ⅛ teaspoon red pepper flakes
- 2 tablespoons Dijon mustard
- 2 tablespoons butter softened
- 1 tablespoon lemon zest
- 4 almon filets fresh or frozen
- 2 tablespoons olive oil
Instructions
- Preheat oven to 450ºF.
- Combine the panko, parmesan cheese, spices, and herbs. Mix well and set aside.
- Combine the dijon mustard, butter, and lemon zest.
- Place the salmon filets on a lined baking sheet.
- Spread the mustard mixture evenly over the top of the salmon.
- Spread the panko mixture even over the salmon, pressing it down lightly into the mustard mixture.
- Drizzle the tops with olive oil.
- Bake for 11-14 minutes if using fresh filets, 15-18 minutes if using frozen. The samlon will register 135-145ºF on an instant read thermometer when it is finished cooking.
