Herbed Lemon Garlic Chicken Skewers

Ingredients
Marinade
- 1 ½ tablespoons minced garlic
- 1 tablespoon fresh lemon zest
- 4 tablespoons fresh lemon juice
- 3 tablespoons minced fresh rosemary
- 3 tablespoons minced fresh basil
- 2 tablespoons minced fresh oregano
- 1 teaspoon salt
- ¼ teaspoon ground black pepper
- 4 tablespoons extra virgin olive oil
Skewers
- 2 ½ cups sliced zucchini, about 2 medium zucchini cut into ½-inch slices
- 1 cup red bell pepper, about 1 large bell pepper cut into ¾ inch squares
- 1 ½ cup largely diced red onion, about 1 large red onion cut into wedges and then 3/4 inch squares
- 1 ¼ pounds boneless skinless chicken breasts, cut into 1 inch cubes

Instructions
- Prepare the marinade by adding 1 ½ tablespoons minced garlic, 1 tablespoon fresh lemon zest, 4 tablespoons fresh lemon juice, 3 tablespoons minced fresh rosemary, 3 tablespoons minced fresh basil, 2 tablespoons minced fresh oregano, 1 teaspoon salt, ¼ teaspoon ground black pepper, and 4 tablespoons extra virgin olive oil to a small bowl and mix to combine. Set aside.
- Place 2 ½ cups sliced zucchini, 1 cup red bell pepper, and 1 ½ cup largely diced red onion, in a large ziplock bag and add 3 tablespoons of the marinade. Close the bag tightly and shake until all of the vegetables are coated.
- Place 1 ¼ pounds boneless skinless chicken breasts, in a separate large ziplock bag and add the remaining marinade. Close the bag tightly and shake until the chicken is evenly coated in the marinade. Place the chicken and vegetables in the refrigerator to marinate for at least 30 minutes, or up to 6 hours.
- Once the marinated, preheat the grill to medium heat. Thread the skewers, alternating the chicken and vegetables. Season lightly with salt and pepper.
- Grill the skewers for about 12 minutes, until the chicken reaches 165 degrees Fahrenheit in the thickest part. Flip the skewers every 2-3 minutes as they cook. Squeeze the skewers with fresh lemon juice and serve with lemon wedges, if desired.
