Garlic Herbed Red Potatoes

These Garlic Herbed Red Potatoes are made with fresh parsley, garlic, and the perfect amount of seasoning to make these tender potatoes full of flavors! Seasoned potatoes make a great side dish recipe and taste great either warm or cold.

Ingredients

  • 2 pounds baby potatoes red
  • water enough to cover the potatoes in a pot
  • ½ tablespoon salt plus more to taste
  • 1 teasapoon garlic powder or 3-4 pressed fresh garlic cloves
  • ½ teaspoon onion powder or one shallot, grated
  • 1 teaspoon celery salt
  • 2 tablespoons fresh parsley finely chopped
  • 2-3 green onions finely sliced
  • 1 ½ tablespoons olive oil or any other kind of neutral plant oil

Instructions

  1. Place the potatoes in a large pot and fill with water just enough to cover them by an inch. Add in ½ tablespoons of salt.
  2. Simmer over medium heat until the potatoes are fork-tender, but not mushy. 
  3. Drain and while still hot stir in the seasonings together with the parsley, onion, and oil. Gently toss the potatoes to avoid crushing them.
  4. Transfer to a large serving bowl.
  5. Serve warm or cool.

Notes

  • Instead of fresh parsley, use fresh or dried rosemary tossed within the cooked potatoes for a garlic and rosemary flavor.
  • Instead of simmering, roast the potatoes in the oven until crispy.
  • Top the garlic herbed potatoes with freshly grated parmesan cheese for extra flavors.
  • To make creamy garlic mashed potatoes, just add a little bit of cream and butter to the cooked potatoes and mash them with a potato masher or wooden spoon.
  • Store the leftovers in an airtight container in the refrigerator for up to four days.
