Ingredients
- 2 pounds baby potatoes red
- water enough to cover the potatoes in a pot
- ½ tablespoon salt plus more to taste
- 1 teasapoon garlic powder or 3-4 pressed fresh garlic cloves
- ½ teaspoon onion powder or one shallot, grated
- 1 teaspoon celery salt
- 2 tablespoons fresh parsley finely chopped
- 2-3 green onions finely sliced
- 1 ½ tablespoons olive oil or any other kind of neutral plant oil
Instructions
- Place the potatoes in a large pot and fill with water just enough to cover them by an inch. Add in ½ tablespoons of salt.
- Simmer over medium heat until the potatoes are fork-tender, but not mushy.
- Drain and while still hot stir in the seasonings together with the parsley, onion, and oil. Gently toss the potatoes to avoid crushing them.
- Transfer to a large serving bowl.
- Serve warm or cool.
Notes
- Instead of fresh parsley, use fresh or dried rosemary tossed within the cooked potatoes for a garlic and rosemary flavor.
- Instead of simmering, roast the potatoes in the oven until crispy.
- Top the garlic herbed potatoes with freshly grated parmesan cheese for extra flavors.
- To make creamy garlic mashed potatoes, just add a little bit of cream and butter to the cooked potatoes and mash them with a potato masher or wooden spoon.
- Store the leftovers in an airtight container in the refrigerator for up to four days.
