The recipe combines lean ground pork with maple syrup, garlic and onion powders, fresh minced sage, salt, black pepper, and chili flakes to create flavorful breakfast sausage patties. Mixing the ingredients lightly prevents toughening the meat, keeping the patties tender. Forming the mixture into approximately 2½-inch-diameter patties ensures even cooking and manageable portion sizes. Cooking in a nonstick or cast iron skillet over medium heat achieves browning without burning.
The lightly sweetened flavor from the maple syrup complements the traditional savory and herbal notes from the sage and spices. The chili flakes provide a subtle heat that enriches the sausage without overpowering it. These patties work well as part of a breakfast plate alongside eggs, vegetables, or breads.
To extend shelf life, shape and freeze patties on a parchment-lined tray until firm, then transfer to freezer bags. Adjust the patty size if desired; larger patties require longer cooking times. Be attentive to temperature control during cooking to avoid over-browning.
Ingredients
- 2 lbs ground pork lean
- 2 tablespoons maple syrup
- 2 tablespoons onion powder
- 2 tablespoons garlic powder
- 2 tablespoons sage minced, fresh
- 2 teaspoons salt
- 2 teaspoons black pepper
- ½ teaspoon chili flakes
Instructions
- Mix the ingredients together in a large bowl. Be careful not to overmix the meat or it will toughen.
- Use a medium-sized cookie scoop (about 2 tablespoons) to form 20 balls. Press them into round patties about 2 ½ inches wide. (see notes)
- Heat a nonstick or cast iron pan over medium heat. Add as many sausage patties as will fit in the pan in a single layer. Cook for 4 minutes per side, lowering the heat if they become too brown. Repeat with the remaining sausage patties.
To freeze breakfast sausages
- Mix the meat and form it into patties. Lay the patties on a parchment paper-lined baking sheet. Place the baking sheet into your freezer. When the patties are completely frozen, remove them from the sheet and store them in a freezer-safe bag. We love reusable stasher freezer bags!

- Form patties to preferred size, noting larger patties need more cooking time.
