Homemade Italian Marinara Sauce
Description
The sauce begins by browning finely diced onion in extra-virgin olive oil until translucent and lightly caramelized, building a sweet foundation. Minced garlic is added and briefly sautéed to release aroma without burning. Red wine adds acidity and complexity, simmered briefly to blend with the aromatics.
Adding crushed tomatoes along with half the fresh herbs—such as parsley, basil, thyme, and oregano—plus kosher salt, black pepper, and crushed red pepper establishes the sauce's robust Italian flavor profile. The sauce simmers slowly for about three hours on low heat, allowing flavors to meld and deepening the texture. The lid may be left ajar to thicken if needed.
During the last minutes, the remaining herbs finish the sauce with fresh brightness. This marinara is well suited for serving with pasta, layering in baked dishes, or spooning over proteins. It can be stored in jars for refrigeration or freezing for convenient use over time.
Ingredients
- 2-3 tablespoons extra-virgin olive oil
- 1 onion finely diced, large
- 4 cloves garlic minced
- 1/2 cup red wine like chianti, strong
- 56 oz. crushed tomatoes like Tutto Rosso (2 large cans, canned
- 1/2 cup herbs parsley, basil, thyme, and/or oregano, finely chopped
- 2 teaspoons kosher salt
- 1 teaspoon black pepper freshly ground
- 1/2 teaspoon crushed red pepper or to taste
Instructions
- Saute onions in olive oil on medium-high heat until browned and translucent, approx. 10 minutes.
- Add minced garlic and saute for another minute.
- Add wine, stir to life any browned onions/garlic from bottom of the pot, and simmer for a couple of minutes.
- Add tomatoes, half of the herbs, salt, pepper, and crushed red pepper. Stir, and let simmer on low heat for 3 hours, stirring and tasting occasionally. Add seasoning as needed.
- If sauce is looking too thin, leave lid ajar for a while.
- During the last 10 minutes of cooking, add rest of the herbs.
Notes
- Use the sauce immediately or freeze it in containers or mason jars for long-term storage.
- Refrigerate for about a week if using within short term.
- Seasoning does not include optional ingredients or brand variations; adjust salt and spices to taste when serving.
