Instructions

  1. Whisk together the flour, sugar, salt and yeast in a large bowl. Set aside.
  2. In a medium bowl, whisk together the yogurt, olive oil and 3/4 cup warm water (About 100 F or 38C).
  3. Add the yogurt mixture to the flour mixture and mix with a fork. When the dough starts coming together, dust your hands with flour and knead gently into a soft dough. Knead just until dough has come together, don't over knead. Dough will be soft and slightly sticky.
  4. Lightly oil a bowl that will be large enough to contain the dough even when it doubles in size. Place the dough inside the bowl and cover with plastic wrap or a damp kitchen towel. Leave the dough to rise in a warm place 1-1.5 hours or until doubled in size.
  5. Once dough has doubled, dust your kitchen counter top with flour. Dump the dough onto this floured work space, and sprinkle the top of the dough with some more flour. Shape the dough into a large rectangle, and cut it into 6 equal portions ( a pizza cutter works great here)
  6. Roll one portion of the dough into an oval shape with a floured rolling pin as thin as you can get it without the dough breaking.
  7. Heat a large cast iron or non stick skillet over medium high heat until very hot. Carefully place your rolled portion of dough onto the skillet and cook until the top has bubbled up and the bottom has turned golden brown and charred in some places. Flip over and cook on the other side 1-2 minutes until cooked through. Brush cooked dough with melted butter.
  8. Roll out another piece of dough into an oval, cook in the same fashion and repeat until you finish all your dough. Garnish dough with parsley and/or sesame seeds if desired.
